Es Ventall opened its doors for the first time over 35 years, the result of the constant, tenacious work of a whole family who have made it a beacon of traditional Ibizan cuisine. In charge of the stoves is chef José Miguel Bonet, who defends traditional cuisine with signature touches prepared over a wood cooker using seasonal produce from the family garden, something which lends a unique flavour to dishes like the fish-based bullit de peix or the sofrit pagès.
