The seasons set the pace for gastronomy in Catalonia. Indeed, seasonal foods are the healthiest and tastiest (their organoleptic quality is higher) and always offer magnificent variety.

Barcelona’s cuisine goes through stimulating changes during the course of the year. In the summer the cooking here is generally based on fresh foods, with lots of salads and cold dishes, many of them from the sea, while stewed dishes, legumes and game meats prevail in the last quarter of the year. Barcelona is the principal marketplace of the foods that are cultivated, gathered or fished in its surroundings. Its market halls were once just the places where the city’s people bought their food, but now they draw many tourists curious about the wealth of seasonal products.


The recipe: Wild mushrooms with potatoes and onion
Ingredients:

  • 1 kg wild mushrooms
  • 4 cloves garlic, in thin slices
  • 1 kg potatoes, sliced
  • 3 tender onions, sliced
  • Olive oil, salt and pepper

Preparation:
In a saucepan with olive oil, fry on a low flame the garlic, potatoes and onion. Cover with water, let boil. Separately, fry on a low flame the wild mushrooms until well cooked, and add to the saucepan. Add salt and pepper, simmer for 10 minutes.
