Ses Escoles is Ibiza’s first “oleoteca”, a space dedicated to the world of olive oil, with a pleasant décor adapted to the surroundings.

Oleoteca Ses Escoles is the best place in which to stroll through an olive plantation – as part of organised tours – and contemplate the production process of Can Miguel Guasch Virgin Extra olive oil, try the different varieties and acquire them in the shop. The experience can be rounded off by tasting dishes marinated with the house oil, including grilled meat, a farmhouse salad with crostes, traditional cocas or cold meat boards.

Ses Escolas is located in an estate of eight oil-producing hectares of land, Can Miguel Guasch, a well-tended olive plantation where 2,300 trees of three varieties of olive co-exist: arbequina, picual and empeltre. The oil they produce is pure, 100% local olive juice, obtained in the estate’s own oil press or trull. In addition, ever since 2014 the oil produced here has been organic, based on the optimal utilisation of natural resources, without using chemical synthesis or genetically modified organisms. An organic foodstuff that respects the natural cycles of the land.

Oleoteca Ses Escoles is located in the former school of Sant Llorenç, hence its name. As well as oil, one can also discover and acquire other local products here, along with typical crafts of Ibiza, and it has a space devoted to tasting. A project that exudes love for Ibizan culture.

Oli d’E
The collective brand Oli d’E distinguishes the Virgin Extra category oil production obtained exclusively from olive trees cultivated on the island. The oil from Can Miquel Guasch has this emblem for its oils from the picual, arberquina and empeltre or pagesa varieties, obtained from the olive juice produced on the estate. Only the best-quality olives are harvested, and those that have fallen to the ground are never used. They are ground in the 2 or 3 hours after harvesting, thanks to the proximity of the oil press to the estate.
